咸蛋金瓜(Pumpkin with Salted Egg Yolk)

材料:
金瓜 400g (去皮,切片)
咸蛋黄 3 粒 (煮熟)
咸蛋白 半汤匙 (煮熟,压碎)
蒜茸 1 汤匙
辣椒 2 条(切粒)
咖喱叶 2 支
牛油 4 汤匙

面糊 (混合均匀):
普通面粉 100g
发粉 1 茶匙
盐 半茶匙
胡椒粉 适量
水 约 150 ml
油 4 汤匙

做法:
1. 金瓜切好,蒸至刚熟而不太烂。
2. 把面糊材料全部搅拌均匀成光滑面糊。
3. 锅中热油,把金瓜沾上面糊,炸至金黄色,取出沥干油分。
4. 把牛油放入锅中煮溶, 加入熟咸蛋黄压成茸,加入蛋白、蒜茸、辣椒和咖喱叶炒匀
5. 最后加入香脆金瓜片快速炒匀即可。

English Version:
Pumpkin with Salted Egg Yolk
Ingredients:
400g pumpkin - peeled, cut into pieces
3 cooked salted egg yolk
half tbsp mashed cooked egg white
1 tbsp chopped garlic
2 dried chillies, cut into small pieces
2 stalks of curry leaves
4 tbsp butter

Batter:
100g plain flour
1 tsp baking powder
half tsp salt
white pepper -some
around 150ml water

Methods:
1. Steam the pumpkin pieces until just cooked and not too soft, leave to cool.
2. Mix the batter ingredients into a smooth batter.
3. Heat plenty oil in pan, dip pumpkin pieces in batter,deep fry until golden. Remove and drain well.
4. Heat the butter in frying pan, add cooked salted egg yolk and press while stirring, add in egg white,garlic, dried chillies, and curry leaves, mix well.
5. Add in the golden pumpkin, mix well and serve hot!
